Recipe Ingredients:
1 Cup dry white wine
3/4 Cups sugar
1/2 Cup water
2/3 Cup golden raisins
2/3 Cup sweetened cranberries (Craisins)
2/3 Cup dried apricots
2/3 Cup dried figs
1/3 Cup crystallized ginger
1/4 Teaspoon dried thyme (or substitute with 2 fresh thyme sprigs)
1/2 Cup chèvre cheese (goat cheese)
Crostini for plating/serving
Recipe Steps:
Combine wine, sugar, water, dried fruit, and thyme in a medium saucepan and bring to a boil. Reduce to simmer and continue to cook for about 30 minutes, stirring occasionally, until liquid is syrupy and compote is thick.
Transfer mixture to a small bowl and allow to cool for about 5 minutes (Remove fresh thyme sprigs).
Serve over crostini or rustic toasts topped with chèvre.
Cooled compote can be refrigerated if stored in an airtight container for up to two weeks.
